After looking at black bananas for a week, I decided to do something productive with them.
They were speaking to me.
"Bake us!"
"Toss us!"
"Just do something to end our misery!"
But I had no recipe.
There were a thousand online, but I felt safe going with the queen of comfort food.
The "Belle of Butter"...
Mrs. Paula Dean ya'll.
Is there a recipe out there that a pound of butter can't fix?
I am so glad I did.
This recipe was so simple.
And so yummy.
I baked 4 mini loaves and they were gone before bedtime.
Modifications:
**My suggestion would be to cut the bake time from 40-45 minutes to 35minutes.
I prefer mine to be a little undercooked, then let them set in the pan for a few more minutes to finish off without getting too dry.
**I also added a smidge of vanilla.
Or you could take my mom's suggestion and try adding toasted coconut and a little rum.
Banana Coconut Rum Bread.
Oh my.
Bon Appetit!
